Vegan Vanilla Pancakes (gluten free)

Your turn to take a bite. Just look at it!! Basic vegan vanilla pancakes topped with a jumble of stuff potentially indiscernible, my bad – raspberries, chocolate sauce, vanilla Silk yogurt, crumbles of the PB coconut mini muffins I just posted, and O-shaped cereal (whatever the heck my knock off brand is called – toasted oats? They good). Pancake craving fulfilled.

Not sure how I feel about this texture (kiiinda dense but at the same time so enjoyable?) but either way it’s a good basic recipe I can improve on from here.

Vegan Vanilla Pancakes

Serves: 1

  • 6 TBSP gluten free all purpose flour (King Arthur brand)
  • 1 TBSP ground flax
  • 1/4 cup + 1 TBSP warm water
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 stevia packet

Mix all of the ingredients in a bowl. Let sit 5 minutes so the batter can thicken! Cook in a large pan over low/medium heat, flipping after 3-4 minutes (or until lightly browned). This makes 5 pancakeys!
