Vegan Funfetti Pancakes (gluten free)

These are the fluffiest vegan pancakes I’ve ever made. Vegan FUNFETTI PANCAKES! These are sugar free, dairy free, and even gluten free! And fun to the maxxxx.

I used to get pretty fluffy pancakes going when I used whey protein powder. The whey protein and egg whites always beefed up pancakes really well. Once I went vegan, I had a hard time nailing pancakes. They always seemed flat or too wet to me. But after some practice now, I think I’m getting them to be really great and how I used to enjoy them! These were incredible; of course, having sprinkles always helps eehehe. Look at the pretty batter!! I’m pretty proud of the swirl, to be quite honest.
Try these pancakes out because I promise you won’t be disappointed by them! I made my stack with sliced banana, a “cream cheese” icing, vegan marshmallows, crushed brown rice crisp cereal, and spraaaankles. What would you use for toppings?! Anything and everything fun, you must.

Vegan Funfetti Pancakes

Serves: 1

  • 2 TBSP coconut flour
  • 2 TBSP buckwheat flour
  • 1 TBSP ground flax seeds
  • 1/4 cup dairy free yogurt (Silk is my favorite brand for this)
  • 1/3 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1 stevia packet
  • 1.5 tsp vegan sprinkles

Mix all of your ingredients and let them sit 5 minutes to thicken. If the batter is too thick after 5 minutes, add 1-2 tbsp more almond milk. Cook the batter at a low/medium heat in a pan sprayed with nonstick spray. Makes 4-5 pancakes!

For the “cream cheese” ing, mix 1/4 cup dairy free yogurt, 2-3 drops cream cheese baking emulsion, and 1 stevia packet.
