Currently devising a plan to make all my meals some form of ice cream. It must be done. I meannnn really. These made me swoon a weeee bit #alotbitactually. I just love how refreshing popsicles, ice cream, cold anything is.
Toasted Coconut + Orange Cherry Popsicles
Makes: 4 popsicles
- 1/2 cup unsweetened shredded coconut
- 1 cup plain Greek yogurt
- 1 tsp coconut extract (Optional)
- 2 TBSP stevia
- 1 cup pitted cherries (approximately 20 cherries)
- 2 TBSP juice from an orange
- 1 TBSP stevia
Scatter the unsweetened shredded coconut on a baking tray and toast at 300 F for 5-7 mins, tossing halfway through. I have two types of shredded coconut – one is fine and small but one is thick and called “fancy.” Use the thicker kind for this or use coconut flakes. Once lightly browned, blend it with plain Greek yogurt, coconut extract, and stevia until smooth and creamy. Next, blend the pitted cherries, juice from an orange, and stevia. In your 4 popsicle molds, layer orange+cherry blend, coconut yogurt blend, orange+cherry blend, and more coconut yogurt blend. Freeze for 3-4 hours until solid.
