Thanksgiving Parfait

This parfait is made with layers of maple apple pie egg white oats, cinnamon yogurt, and mashed sweet potato. Then topped with a mix of chia seeds, hemp seeds, and buckwheat. So you see where the name comes from? ;p The flavors come together way too perfectly.

Serves: 1

  • 3 oz mashed baked sweet potato

Maple Apple Pie Egg White Oats

  • 1/2 cup old fashioned rolled oats
  • 1 tsp chia seeds
  • 3/4 cup unsweetened almond milk
  • 1/2 tsp maple extract
  • 1/2 tsp apple pie spice
  • 1 stevia packet
  • 1 egg white

Cinnamon Yogurt

  •  1/2 cup plain Greek yogurt
  • 1/4 tsp cinnamon
  • 1 stevia packet

Mix all of the ingredients for the oatmeal except for the egg white. Microwave for 2 minutes. THEN add in the egg white and stir well! Microwave in 30 second intervals, stirring the oats well so that the egg whites don’t clump up. It will take a total of 1-1.5 minutes after adding the egg white.

Mix the three ingredients for the yogurt layer.

Layer the oats with the yogurt and the mashed sweet potato and enjoy!
