I feel like I experienced summer in pancake form! Sweet ginger protein pancakes topped with a cranberry mash, healthy lemon cake Halo Top Creamery ice cream, and one of my “Reese’s” pan cookies crumbled. I’d argue that the best meal of any day is definitely the postworkout meal.
- 1/2 cup raw oats
- 1/2 scoop vanilla whey protein
- 1 egg white
- 1/4 cup lowfat cottage cheese (or another egg white
- 1 TBSP water
- 1/2 tsp baking powder
- 1/2 tsp ginger
- 2 drops princess cake flavor baking emulsion (Optional, I got it on amazon)
- 1 stevia packet
Grind the oats into a flour. Then add the remaining ingredients and blend again until even. Heat a large pan to a low/medium heat. Spray with nonstick spray. Then cook pancakes on pancakes on pancakes for 2-3 mins per side.
