The warm spring weather this week has me craving cold food! So post workout I made a thiiiiickthickthick strawberry shortcake protein fluff with a buncha toppings: chia seeds, hemp seeds, pepitas, currants, raw buckwheat groats, raw old fashioned rolled oats, and toasted unsweetened coconut flakes. Yumyumymumumymm. Did I emphasize that it’s thick :D. This protein fluff is so easy, 4 ingredients, and one of the first things I learned to make when I first started eating healthy ~2 years ago. I’m also a volume eater and it makes a ton so that makes me happy.
- 1 cup frozen strawberries
- 1 scoop corfetti whey protein (by cellucor)
- 1/4 cup unsweetened almond milk
- 1/2 tsp xanthan gum.
Blend all 4 ingredients! You can use any whey protein but the corfetti gives it the cakey taste! VOILÀ. Done. The xanthan gum is necessary to thicken it.
