Breakfast on a very groggy morning. Strawberry brownie baked oatmeal topped with a strawberry cream and chopped cocoa almond Square Bars (I got a discount code! I went out the previous night with a friend to see our favorite drag queen, Bianca Del Rio. She won season 6 of Ru Pauls’s Drag race and we both fell madly in love. She’s touring and stopped in Atlanta; aaaamazing evening. Trinity K Bonet was my second favorite from the season and was from Atlanta sooo Trinity was at the show too. Nothing less than extraordinary. Except for the..being asleep at 2 and waking up at 5:30 for work part. Meh.
- 1/2 cup old fashioned rolled oats
- 1/2 cup unsweetened almond milk
- 2 TBSP pumpkin purée
- 1.5 TBSP unsweetened cocoa powder
- 1 egg white
- 1 TBSP coconut flour
- 1/2 tsp baking powder
- 2 stevia packets
- 1/4 cup chopped strawberries
Mix all of the ingredients except for the strawberries. Once well mixed and homogenous, lightly fold in 1/4 cup chopped strawberries (fresh or thawed from frozen). Spray a ramekin with nonstick spray and pour your oats in. Bake at 375 F for 30 mins.
To make the strawberry cream, mix 1/4 cup plain Greek yogurt, 3-4 chopped strawberries, 1-2 TBSP water to desired consistency, and stevia to taste.
