I didn’t even expect how delicious this was. I love how you could take this concept and stuff it with whatever ingredients you have on hand!! So good and versatile.
- 1 serving spicy peanut curry chicken, chopped
- 1/3 cup peas (from frozen)
- 1/4 cup sauteed onions
- 3 oz baked delicata squash
- 3 rice paper rolls
Soak rice paper in water to soften, then slice in half to make two semi circles. Fill one portion with a little of each of the remaining ingredients. Fold and wrap to make a sealed triangle, and place on a baking sheet. Rub each side with a LITTLE olive oi (anout 1/8 tsp per samosa). Repeat for all 6 halves. Bake at 400F for 10-12 minutes, flip, and bake another 10 minutes.
I served mine with a lemon mint cream (1/4 cup plain Greek yogurt, 1 TBSP juice from a lemon, 10-12 chopped fresh mint leaves, and 8-10 stevia drops) and peach sweet potato preserves by Veggie Mama (It has no sugar!)
