Spicy Peanut Curry Chicken

The flavors ended up so perfect on this chicken, especially with the persimmon I wedged in between! You know I love me some sweet + savory mixed dishes.

Serves: 1

  • 1 TBSP peanut flour
  • 1 tsp apple cider vinegar
  • 2 tsp water
  • 1/2 tsp curry powder
  • cayenne pepper to taste
  • 4 oz raw chicken

Preheat the oven to 350 F. Mix the peanut flour, apple cider vinegar, water, curry powder, and cayenne pepper until smooth. Put the chicken in a plastic bag with this sauce mixture. Toss until evenly coated, then place on a baking sheet sprayed with nonstick spray. Bake at 350 F for 25-30 minutes.
