I made a batch of southwestern turkey bacon egg muffins for the week . Kinda mad I didn’t take a yolk picture but whatevs too late. Love how easy it is to make a ton at once. I made 8 but you can do infinityyyyy egg muffins.
- 8 pieces of turkey bacon
- 8 slices baked sweet potato
- 8 slices of tomato
- 8 whole eggs
- salt free Mexican fiesta seasoning (Frontier brand from iherb.com)
I sprayed a cupcake pan, put a slice of turkey bacon around the edge. Then I put a slice of sweet potato on the bottom of the cup. I put a slice of tomato on top followed by a whole egg. Lastly, I sprinkled salt free Mexican fiesta seasoning (Frontier brand from iherb.com, discount code GIK407 gives $5-10 off iherb) on top of the egg. I repeated this for all 8 muffins. Thennnn just baked them at 350F for 20-25 minutes. I like runny yolk so I did 20 minutes.
