Makes: 8 muffins
- 1 cup rinsed and drained chickpeas
- 1 scoop vanilla protein powder (I used Jamie Eason’s lean body for her brand, ~40 g)
- 2 egg whites
- 2 TBSP manbake protein cookie butter (almond butter would be an okay substitute)
- 1/4 cup plain Greek yogurt
- 1/4 cup water
- 2 stevia packets
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
Blend all of your ingredients together. Spray a cupcake tray with nonstick spray. Pour your batter into 8 cupcake molds. Bake at 350F for 20-22 mins. Let cool. Then try not to eat them all at once like I nearly did.
