Savory Waffle Bread

Sooooo.. I got a belgian waffle maker for my birthday! I feel like I waited sooo long for one of these babies! I couldn’t contain my excitement. And. My boyfriend and I may or may not have had two waffles each within the first 24 hours of owning it. No regrets :} Yesterday I decided to switch up the sweetness for a more savory meal, but I still wanted waffles sooo…. I made a waffle bread! I wasn’t too sure how it’d turn out but it was a success! I made a sandwich of catfish that was pancooked with chipotle chili powder, spinach, avocado, pickles made from my moms homegrown cucumbers, tomato, and horseradish mustard. So. So. Good. I’ll definitely be making this bread again.

Serves: 1

  •  1/4 cup raw old fashioned rolled oats
  • 2 TBSP ground flax
  • 2 TBSP coconut flour
  • 3 egg whites
  • 3 TBSP unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Grind your oats into a flour. Add the rest of the ingredients and blend again until mixed. Cook in a waffle maker! If you don’t have a waffle maker, it also works in a pan.
