Salted Caramel Protein Cookies

Mmm salted caramel protein cookiessssss filled with gooey goodness. Found a nifty recipe by @swallowfitness on Instagram and made some adjustments to make these yummy babies.

Makes: 10 cookies

  • 1 cup ground up raw oats (80 g)
  • 2 scoops salted caramel quest nutrition protein powder
  • 2 stevia packets
  • 1/2 tsp baking soda
  • 1 whole egg
  • 1 TBSP coconut oil
  • 1/2 tsp imitation caramel extract (Optional)
  • 6-7 tbsp unsweetened almond milk
  • 1 chocolate caramel Simple bar (Detour Bar brand)

In a bowl, mix everything except for the detour bar!! Mixmixmix it rull good. Roll the dough into 10 cookie dough balls, placing a slice of a chocolate caramel simple bar in the center of each. Bake at 350 F for 9 minutes. EEEEEAT.

 

Nutritional info for 1 cookie: 85 cals; 2.6 g fat, 8.8 g carbs (1.6 g fiber), 7.5 g protein

    OMG this recipe is fabulously fool proof! I didn’t want to use the oat flour because a whole cup might make me too gasey, but, I used 1 cup almond flour, 1/4th gf bob’s mills oats, 1/4th cup unsweetened cranberries, 1/2 tsp vanilla alcohol free extract, 2 tbs dark chocolate chips (w/ cane sugar–hey girl’s gotta ‘cheat’ :P), 1 quest chocolate brownie quest bar because the only caramel I had on hand was pumpkin caramels and I didn’t want to ‘carb up’ w/ unhealthy carbs. Oh and 6 tbs almond/coconut milk blend. Despite my alterations these came out a bit chewy, and just flat out delicious. I plan on messing with the bake time next time so they ar emore chewy. I realize almond flour has a different texture so it’s likely they will never reach that same texture, but overall, a fab. lo carb cookie.
