Ahh, Saturday. The day of pancake stacks :D hollaaa. Breakfast Saturday: red velvet protein pancakes with cookies & cream quest bar pieces in the batter. Layered with a sweet ricotta whip. Topped with more cookies & cream quest pieces and a vanilla protein drizzle (labrada nutrition brand that I’ve been trying out).
It’s like some fancy protein fountain. A really fluffffyyyy protein fountain. “Exuding timeless style and classic artistry this Protein Fountain brings a world of detailed beauty to this indoor pancake feature” -Google. Sorta.
Red Velvet + “Oreo” Protein Pancakes
- 1/4 cup raw old fashioned rolled oats
- 1/2 scoop red velvet protein powder (cellucor brand)
- 2 TBSP coconut flour
- 2 egg whites
- 3 TBSP unsweetened almond milk
- 1/2 tsp baking powder
- 1 stevia packet
- 1/4 cookies and cream quest bar
Grind the oats into a flour. Then add the remaining ingredients into the batter, except for the quest bar. Blend again until smooth. Break apart and add 1/4 cookies and cream quest bar to the batter. Cook in a large pan on a medium/low heat for 3-4 mins, flip, and cook another 1-2 mins.
I topped with another 1/4 of the quest bar and a vanilla protein drizzle. I also layered them with a sweet ricotta spread (1/4 cup reduced fat ricotta, 1/4 tsp vanilla extract, and 1 stevia packet).
