Serves: 1

  • 1/2 cup raw old fashioned rolled oats into a flour
  • 2 TBSP CocoCardio – I buy this on  iherb.com
  • 1/2 tsp baking powder
  • 3 stevia packets
  • 1/4 cup pumpkin puree
  • 2 TBSP strawberry elliquark (or yogurt)
  • 3 egg whites
  • 4-5 drops red food coloring (Optional)

First, grind the oats into a flour. Then add the remaining ingredients. Blend again!! Pour into a bowl or 2 different mugs sprayed with nonstick spray. Microwave for 3 mins (if in a bowl) or 1.5 mins (if in 2 mugs). Cut into 3-4 slices and layer with the mousse!

For the strawberry mousse: mix 1 container of strawberry elli quark (6 oz) with 1 scoop (28g) of quest vanilla protein powder.

To make the chocolate cup:,wrap a cup with Saran Wrap or foil! Melt 2 oz stevia-sweetened chocolate in the microwave. Coat the foil and freeze upside down not to disturb the chocolate. Once solid, remove the foil. FILL WITH YUM STUFF.
