Serves: 1

Oatmeal Base

  • 1/2 cup raw old fashioned oats
  • 1/2 cup unsweetened almond milk
  • 1 TBSP coconut flour
  • 1/2 scoop CocoCardio (1/2 TBSP)
  • 1 egg white
  • 1 tsp vanilla extract
  • 1 stevia packet

“Cheesecake” Whip

  • 1/3 cup lowfat cottage cheese
  • 1 TBSP vanilla whey protein
  • 1⁄2 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 1 stevia packet

Mix all of the oatmeal base ingredients in a bowl. Pour into an oven-safe dish thats been sprayed with a nonstick spray. Bake at 350 F for 25-30 minutes.

Make the “cheesecake” icing by using a hand blender to blend the 5 listed ingredients. Pour on top of the oats once baked.

I also added on some almond butter and a healthy chocolate drizzle (2 tsp unsweetened cocoa powder, 1 TBSP unsweetened almond milk, and 1-2 stevia packets).
