Grind the oats into a flour. Then add the remaining ingredients. The coconut oil is important! I tried without coconut oil and it didn’t hold together. Once mixed, spray a waffle maker with nonstick spray and pour in your batter. Cook! That’s it!
I’d love to toy around with the toppings for these! I feel like pumpkin is such a great, bursting flavor that makes magical combinations with other foods. SUCH AS CRANBERRY. What all would you put on these pumpkin waffles?! I’m going to be making a bunchhhh more.
