Pumpkin Spice Pancakes (with a walnut cream)

Pumpkin Spice Pancakes (with a walnut cream)

Serves: 1

Pancake Batter

  • 1/3 cup raw old fashioned rolled oats
  • 1/2 scoop vanilla whey protein
  • 2 TBSP coconut flour
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 3 egg whites
  • 1/4 cup pumpkin purée
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/2 tsp black walnut extract (or more vanilla)

Walnut Cream

  • 1 TBSP raw walnut butter
  • 3 TBSP plain Greek yogurt
  • 2 TBSP unsweetened almond milk
  • 1 stevia packet

First grind the oats into a flour. Then add the rest of the ingredients for the pancake batter and blend again. Form 3-4 pancakes in a large pan sprayed with nonstick spray and cook on a medium heat. Cook 3-4 minutes per side. Make the walnut cream by mixing the four ingredients. I also added pumpkin seeds and puffed millet on top of my pancake stack!

    Is there any additional liquid in the batter recipe? I mixed this up and it’s so thick I can’t get everything incorporated. Some kind of milk, maybe?

      Nope, I usually don’t add any liquid. My batter is thick. It should be thick. If yours won’t blend, add 1-2 TBSP almond milk but I would suggest not.
