I made this after I saw a baked oatmeal dish made by @Chelsea_lifts that I reeeallly wanted. This is my take on it! I actually made it twice because I didn’t take a picture the first time and really wanted to share how good it was O_O That. Good.
- 1/2 cup raw old fashioned rolled oats
- 2/3 cup unsweetened almond milk
- 1/4 cup pumpkin puree
- 1/4 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1/2 tsp black walnut extract (or more vanilla)
- 3-4 chopped up dried apricots (no sugar added)
- 1 stevia packet
Mix all of the listed ingredients in a bowl and microwave for 3:30-4:00 minutes.
I topped mine off with a vanilla protein cream (1/4 cup plain Greek yogurt, 1 TBSP vanilla whey protein, 1/2 tsp vanilla extract, and 10-12 vanilla stevia drops), a cinnamon crumble (1 TBSP coconut flour, 1 TBSP + 1 teaspoon unsweetened almond milk, 1/8 tsp cinnamon, and 5-7 stevia drops), chopped walnuts, and more chopped up dried apricots.
