Pecan Pie French Toast Cups

Fact: finger food is theee best food. This is such a great way to make normal french toast exciting. Plus you get the perfect ratio of fluffy bready goodness to topping/icing.

Serves: 1

  • 2 egg whites
  • 2 TBSP unsweetened almond milk
  • 1 TBSP sugar free syrup
  • 1 stevia packet
  • 1/2 tsp maple extract
  • 2 pieces bread of choice (I use nature’s own 40 cal/slice wheat)
  • 2 TBSP cinnamon swirl whey protein (by cellucor)
  • 1 TBSP unsweetened almond milk
  • 1 TBSP sugar free syrup
  • 5-7 stevia drops
  • 1/8 tsp maple extract
  • 1/8 tsp imitation butter extract
  • 1-2 TBSP chopped pecans

Mix the egg whites, unsweetened almond milk, sugar free syrup, stevia packet, and maple extract. Cut 2 pieces of bread into 4 pieces each, 8 squares total. Dip the bread in the egg white mixture for 2-3 minutes per side. Spray a mini muffin pan with nonstick spray. Press one square into each mold. Bake at 350 F for 13-15 minutes until the egg whites are cooked. Mix the cinnamon swirl whey protein, unsweetened almond milk, sugar free syrup,  stevia drops, maple extract, and imitation butter extract. Place some of this mixture inside the center of each baked cup. Put some chopped pecans on top of each cup. Then eat!
