Peanut Butter Protein Mugcake

Welcome to Mugcake 101, the follow-up course of Intro to Pancake Math at Beechie University with Professor Me. Lesson 1: if your mugcake seems visually abnormal, drown it with questionably way too much other stuff until said mugcake looks as appealing as it tastes. Test tomorrow k. See Figure 1 below for reference. Peanut butter protein mugcake drenched in a ‘Nutella’ glaze, cinnamon bun Wink Desserts ice cream, and chopped apple cinnamon smart bar Detour bar. #mugcake101

Serves: 1

  • 1 TBSP peanut butter marshmallow whey protein (cellucor brand)
  • 2 TBSP coconut flour
  • 2 egg whites
  • 1 TBSP plain Greek yogurt
  • 2 TBSP unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/4 tsp almond extract (Optional)
  • 1 stevia packet

Mix all of your ingredients in a bowl. Pour in a mug sprayed with nonstick spray and microwave for 1:30-2:00 minutes. Das it!

To make the ‘Nutella’ glaze, I mixed 1/2 TBSP rawmio, 2 TBSP plain Greek yogurt, 2 TBSP water, and stevia.
