Peanut Butter “Poptart”

Soo Kellogg’s came out with a new poptart flavor this week. Peanut Butter and they also have Chocolate Peanut Butter. Since I’ve been on a poptart kick lately, I figured this was the next most logical flavor to attack :p It took a few failed attempts but this recipe came out great :)

Serves: 1

  • 2 TBSP oat flour (old fashioned rolled oats ground up)
  • 2 TBSP peanut flour (or pb2)
  • 1 TBSP almond flour
  • 1 TBSP coconut flour
  • 1/4 tsp vanilla extract
  • 1 stevia packet
  • 1/4 cup unsweetened almond milk
  • 1 La Tortilla Factory Low Carb/High Fiber tortilla (or favorite tortilla)

First, make the inner peanut butter dough by mixing everything together (except for the tortilla :p). Place the dough in the middle of your tortilla; fold all four sides like a poptart. Spray a panini press or countertop grill (I used a grill) with nonstick spray, then press down the poptart base until it starts to brown. Then I topped mine with 1 TBSP of all natural peanut butter!

Without the pb on top: 258 cals, 11g fat, 35g carbs (19g fiber, 3g sugar), and 21g protein.

    Hi. I.had a question about how you wrap it. is your wrap circular because I’m having some trouble wrapping it. lol.

      Ha, yeah it is circular! I fold the two long ends first and then the two sides inward to where they overlap each other. I hope that makes sense haha.

      I would love to say yes butttttt… I don’t believe so. When I first experimented with the recipe I tried it with less almond flour/peanut flour initially and the taste just wasn’t right. If you just use the oat flour, it won’t taste nutty or delicious really… :/ You need the peanut and almond flour.

    How many inches (approx.) are those tortillas? The ones I have aren’t La Tortilla but they are 6 inches across.

    Hey Kim! I know you said you needed the peanut and almond flour, but you didn’t say anything about subbing the peanut flour for the almond flour…is that allowed? Thank you!!

    Making this today! Btw: How /where do you store your oat flour, almond flour, & coconut flour once opened? I heard if you store in the fridge/freezer they last longer? Thanks!
