Peanut Butter “Chocolate Chunk” Pancakes

Serves: 1

  • 1/3 cup raw old fashioned rolled oats
  • 1/2 scoop peanut butter marshmallow whey protein (by cellucor)
  • 1.5 TBSP coconut flour
  • 1 TBSP peanut flour
  • 3 egg whites
  • 1/2 tsp baking powder
  • 1/4 tsp almond extract (Optional)
  • 1 stevia packet
  • 1/2 double chocolate chunk quest bar

Grind the oats into a flour. Then add the remaining ingredients except for the quest bar and blend again. Break up the quest bar into chunks, and swirl it into the batter. Cook in a large sprayed pan on a medium heat 2-3 minutes. Flip. Cook another minute.

On top of mine, I added raw cacao nibs and a maple coconut cream. To make the cream, use a handblender to blend 1/4 cup lowfat cottage cheese, 2 tbsp sugar free syrup, 1/2 tbsp unsweetened almond milk, 1/4 tsp maple extract, 1/4 tsp coconut extract, and 1 stevia packet. Then swirl in 1 tbsp unsweetened coconut shreds.
