Peanut Butter Caramel Mugcake

Unf!! I had this postworkout today and it is a KEEPERRRR. I have to make it many more times to come! I know I will. It was sooo soft and delicate. :DD

Serves: 1

  • 1/3 cup raw old fashioned rolled oats into a flour
  • 2 TBSP peanut flour
  • 1/2 TBSP coconut flour
  • 2 TBSP unsweetened applesauce
  • 1 TBSP plain Greek yogurt
  • 2 egg whites
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 1/2 tsp caramel extract

Grind the oats into a flour. Then add the remaining ingredients and blend again. Pour into a bowl sprayed with nonstick spray and microwave for 2:00-2:30 minutes. Flip onto a plate n eeaatttt.

I topped mine with a coconut protein cream (3 TBSP plain Greek yogurt, 1 TBSP coconut whey protein from truenutrition.com, 1/2 TBSP unsweetened almond milk, and 1 stevia packet), chopped dates, chopped lemon cream pie quest bar, and unsweetened coconut flakes.

    Wow, this was just amazing! Since I’m lactose intolerant, I just replaced the Greek yogurt with thick coconut milk, and it worked just fine!
