Peanut Butter Blondies

I saw @joefearn make some black bean brownies the other day and really wanted to try the recipe, but had no black beans…. So I improvised and came up with this instead! I looooved it and always preferred vanilla things over chocolate anyways :p So yum and I’ve already gone through two full batches in a week… Whoops.

IMG_1346Peanut Butter Blondies

Makes: 12

  • 3/4 cup raw old fashioned oats
  • 1 cup white northern beans (or chickpeas)
  • 9 TBSP liquid egg whites (or 3 egg whites)
  • 1/2 cup unsweetened almond milk
  • 1/3 banana (40 g)
  • 1 and 1/3 scoops pb cookie dough whey protein (or 50 g any whey protein, which is usually 1.5 scoops for most brands)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 5 stevia packets

Preheat the oven to 350F. Blend all of your ingredients together!  Spray a rectangle baking tray with a nonstick spray. Pour your batter in. Bake at 350 F for 25-30 minutes.When a toothpick comes out clean, it’s done! Let cool, slice and enjoy!

For one blondie (out of 12): 65 calories; 1 g fat, 8 g carbs (2 g fiber), 6 g protein

IMG_1993I also made a version that has a chocolate peanut butter swirl. For the swirl, follow the recipe directions but before placing it in the oven, mix 2 tTBSP peanut flour, 1/2 TBSP unsweetened cocoa powder, 2.5 TBSP unsweetened almond milk, and 1 stevia packet. Pour on top of the batter and swirl it around. THEN bake as directed.

    These are delicious and so easy to make!! To make black bean brownies could you just sub the chickpeas for black beans and then add chocolate protein powder & cocoa powder??

      The recipe says to blend everything, so the oats end up getting blended to a flour anyways. Essentially you end up making oat flour by blending anyways. So either is fine.
