Orange Cinnamon Overnight Oats

Serves: 1

  • 1/2 cup raw old fashioned rolled oats
  • 1/2 TBSP chia seeds
  • 1/2 tsp orange extract
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 stevia packets
  • 1/2 cup unsweetened almond milk
  • 1/4 cup plain greek yogurt

Combine all of the ingredients in a bowl or jar. Stir with a spoon and place in the fridge overnight so the chia seeds and oats soak up the liquid and get plump.

In the morning, add sugar free orange jelly, natural almond butter, and a cinnamon crumble (1 tbsp coconut flour, 1/4 tsp cinnamon, 8-10 stevia drops slowly mixed with 1 tbsp + 1 tsp unsweetened almond milk). Enjoy cold.

Looks like a fantastic recipe. However, instead of using regular cinnamon (Cassia) try it with real cinnamon called Ceylon Cinnamon. Ceylon Cinnamon has 1250 times less Coumarin in it (a substance the FDA says is very dangerous to ingest) and the flavor is amazingly better.
