I had leftover ripe bananas and decided to make some ice cream after freezing them! I took a base recipe by Gloria and just changed the flavor to make mint chocolate chip ice cream. This recipe is sooo simple and only needs 4 ingredients. The texture ended up impressive I was surprised by the creaminess. #happykim
Mint Chocolate Chip “Ice Cream”
Makes: 6 ish servings
- 4 frozen bananas, roughly chopped
- 1.5 scoops mint chocolate chip whey protein (cellucor brand)
- 1/4 cup lowfat cottage cheese
- 1/2 cup unsweetened almond milk
Blend everything in a food processor. Once evenly blended and thick, pour into a container and freeze 5-6 hours. When frozen, thaw a few minutes to soften, then scoop and serve!
