Lemongrass Thyme Salmon (+ Peach Avocado Salsa)

It’s no secret that my favorite meat is salmon. Kinda funny since I used to hate seafood… Anyways. Out of all the salmon I’ve eaten, I’m pretty sure that tonight I made THE BEST salmon I’ve ever had. No lieeeee. Dinner was lemongrass thyme salmon topped with a peach avocado salsa. Oh baby. Served with spiralized zucchini “noodles.”

Serves: 1

  • 6 oz raw salmon filet
  • 1/4 cup water
  • 1 TBSP apple cider vinegar
  • 1/2 TBSP bragg’s liquid aminos
  • 1 TBSP coconut milk powder
  • 1 TBSP diced fresh lemongrass
  • 1/2 tsp thyme

Spray a pan with nonstick spray. Place your salmon filet in the pan. Mix the remaining ingredients and add to the pan. Cook on a medium heat until one side is lighter in color and cooked, flip, and cook the other side until it flakes.

Peach Avocado Salsa

  • 1/4 cup diced peach
  • 1/4 avocado, chopped
  • 3 TBSP diced onion
  • 1 TBSP diced chives (or more onion)
  • 1 tsp minced garlic
  • juice from 1/3 lemon
  • black pepper to taste

Simply dice and mix all of your ingredients in a bowl.
