Lemon maple is a wonderful flavor combination that Leah thankfully suggested. It’s definitely a good one!! I tried it with meat first and then made these pancakes too – it can go either savory or sweet :D
Serves: 1
- 1/4 cup raw old fashioned rolled oats
- 2 TBSP coconut flour
- 2 egg whites
- 2 TBSP plain Greek yogurt
- 1/2 tsp baking powder
- 3/4 tsp maple extract
- 25 lemon stevia drops
First grind your oats into a flour. Then add the remaining ingredients and blend again. Cook on a medium heat in a pan sprayed with nonstick spray for 3-4 minutes, flip, and cook another 1-2 minutes. It helps fluff them up if you cover it with a lid. :)
I topped mine with sugar free syrup and a chocolate cream. The cream was made by mixing 2 TBSP plain Greek yogurt, 2 tsp unsweetened cocoa powder, 1.5 TBSP unsweetened almond milk, and 1 stevia packet.
