I just won a contest with ripped recipes for submitting a recipe using quest bars. I still can’t believe I won – I received SIX boxes of quest bars!! I am ecstatic. I couldn’t wait to dig in because I’ve really been craving the lemon cream pie flavor. So I made these crepes right away :)
- 1 TBSP oat flour (ground up old fashioned rolled oats)
- 1/2 scoop vanilla whey protein
- 1 tsp psyllium husk
- 4 egg whites
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 stevia packet
- 1 lemon cream pie quest bar
Lemon Cream Icing
- 3 TBSP plain Greek yogurt
- 1/2 TBSP unsweetened almond milk
- 1/4 tsp vanilla extract
- 12-15 lemon stevia drops
Blend all of the crepe base ingredients except for the quest bar. Spray a large pan with nonstick spray and pour half the batter in. Cook on a medium heat for 2-3 minutes, flip, cook another minute. Slice a lemon creme pie quest bar in half so you have two long strips. Place one half in the center of the crepe and roll it up! If it’s not soft, microwave the whole thing for 20-30 seconds. Repeat for the other half of the batter.
Make the lemon cream icing by mixing the four listed ingredients. Add on top.
