Homemade Salsa

Last night I made fish tacos with my boyfriend. He suggested them and I paused.. and realized I have NEVER made fish tacos! I don’t know what I never thought of it before. I used a whole wheat tortilla, shredded lettuce, pan cooked flounder, this homemade salsa, avocado, and a sweet dill cucumber dressing. The salsa was sooo quick and only 4 ingredients! Definitely beats out jarred salsa.

Serves: 2-3

  • 1 medium tomato
  • 1/3 cup diced onion
  • Juice from 1/2 lime
  • 1 tsp cilantro

Dice the tomato and onion finely and combine in a bowl. Squeeze in as much juice as you can from 1/2 a lime, then add your cilantro and bam! Easy and delicious salsa to put on fish tacos.
