Healthy Oreo

Last weekend was Jesse’s birthday and there were oreo cookies and smores there. Even when I ate poorly, I never really cared much for oreos. But for some reason I really wanted one O_O Sooo… of course I made my own this weekend! :D And oh my goshhhh this was great. The outer cookies were so perfectly crisp and dense. Just amazing. I have a feeling I’ll be making another for the next few nights in a row.

Healthy Oreo

Serves: 1

Oreo Cookies

  • 1/3 cup garbanzo bean flour
  • 1/4 cup water
  • 1.5 TBSP unsweetened cocoa powder
  • 2 stevia packets
  • 1 tsp vanilla extract

Cookies and Cream Filling

  • 1/3 cup lowfat cottage cheese
  • 1 TBSP cookies and cream whey protein
  • 5-7 stevia drops

Combine all of the oreo cookie ingredients and whisk them together. It should be pretty thick! Spoon into two portions in a pan sprayed with nonstick spray. You want them sort of thin and as wide as you can get them. Let cook on a low heat for 2 minutes, flip, and cook another 2 minutes. Those are your two outer cookies! Make the filling by first blending the cottage cheese with a handblender. It gets a lot creamier :D Then stir in the whey protein and stevia with a spoon or knife. Spread between the two cookies and enjoy! Ommmnomnomnom.

      Unfortunately, not coconut flour. It is too light and won’t hold together when you try to cook it. I feel garbanzo bean flour is the best flour for this.

    Any other suggestions for the filling? Ipone of the very few things i just cannot stand to eat is cottage cheese… Any ideas ?

    I’m not aloud protein powders according to my nurse. Would I be able to use something different for the filling?

      Use a nut butter! I’ve tried it with a TBSP of macadamia nut butter instead of the protein powder and it was deeeelicious.

      I would recommend just 1 tbsp of a nut butter! Orrrr if you mix coconut flour with stevia and a little almond milk, it makes a nice spread!

    Oh my gosh! I love you!!I need to make this ASAP! I am an oreo freak!And since ive decided to eat healthy, I cant even tempt myself with buying oreos, because I will eat the entire package. SO excited to try these!!!

      YESSSS! I know that feeling, I can’t come close to whipped cream or else the whole can is going down ahahaha. Definitely try these out!

      For the entire recipe including the filling its 256 calories, 4 g fat, 33 g carbs, 24 g protein. without the filling is 170 calories, 4 g fat, 28 carbs, 9 g protein
