Dinner was phenomenal. Fiesta lime shrimp, mint mango salsa, avocado, and spinach. On la tortilla factory low carb tortillas. So glad I made extra of these fish tacos for leftovers.
- 4 oz shrimp
- juice from 1/2 lime
- Ms. Dash fiesta lime seasoning
- 2 large low carb La Tortilla Factory tortillas
- 2 handfuls of spinach
- 1/4 avocado
- 1/2 cup diced mango
- 3 TBSP diced onion
- 15-20 fresh mint leaves
- 2 tsp minced garlic
- juice from 1/3 lime
- salt & pepper
In a pan, cook the shrimp in juice from 1/2 lime and Fiesta Lime seasoning to taste. Lay out your tortillas. In each tortilla, place a handful of spinach. Then split your shrimp amongst the two tortillas. Dice 1/4 avocado and add half to each tortilla. Make the mint mango salsa by mixing the diced mango, diced onion, mint, garlic, lime juice, and salt and pepper to taste. Add salsa on top of each tortilla.
