Espresso French Toast

A wonderful breakfast option. Even though I had it for dessert :D tehehehe

Serves: 1

French Toast 

  • 2 egg whites
  • 2 TBSP unsweetened almond milk
  • 1 tsp instant espresso
  • 1 tsp vanilla extract
  • 1 stevia packet
  • 2 pieces of 40 calorie/slice bread (natures own brand)

Vanilla Icing Fluff

  • 1/3 cup lowfat cottage cheese
  • 1 tsp vanilla extract
  • 12-15 vanilla stevia drops
  • 1/8 tsp xanthan gum (Optional, to thicken)


Mix the french toast ingredients (except for the bread). Then place the bread in the mix for 2-3 minutes per side so it’s soaked. Cook in a sprayed pan over a medium heat for 4-5 minutes per side, or until the egg whites are cooked.

With a handblender, blend the cottage cheese, vanilla extract, stevia, and xanthan gum to make the icing. Place between the toast slices.

I also added vanilla espresso almond butter, vanilla almond butter, and chocolate brownie quest bar pieces on top.
