Egg Nog Overnight Oatmeal

Unf – I forget how lovely egg nog flavor is. I LOVE my extract collection because I can make flavors like this. I get mine at the grocery store but iherb.com has an extensive collection as well! If you use GIK407 at checkout you receive $10 off an order.

I made these oats and then made a parfait out of them for breakfast. The layers are the egg nog overnight oatmeal, puffed millet, a chopped up pumpkin protein bar, a healthy chocolate sauce (2 tsp unsweetened cocoa powder, 1 tbsp unsweetened almond milk, and 2 stevia packets), and unsweetened coconut shreds.

IMG_4431Egg Nog Overnight Oatmeal

Serves: 1

  • 1/2 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 1/2 TBSP chia seeds
  • 1/2 tsp vanilla extract
  • 1/4 tsp brandy extract
  • 1/8 tsp rum extract
  • 1/8 tsp nutmeg
  • 1 stevia packet

Mix all of the ingredients together in a bowl. Place in the fridge and let sit overnight. The oats will soak and the chia seeds plump up! Enjoy cold in the morning.
