Hey hey heyyy. It’s pretty depressing how long it’s been since I’ve made a parfait. This made up for lost time.
Makes: 2 parfaits
- Deep Chocolate Mugcake recipe
- 1 double chocolate chunk quest bar (or cookies and cream flavor)
- 2/3 cup lowfat cottage cheese
- 2 TBSP vanilla whey protein
- 1 TBSP coconut flour
- 2 stevia packets
- 1 tsp vanilla extract
First, make my deep chocolate mugcake. Its the most killer mugcake ever, I promise. Let cool. While that’s cooling, use a handblender to blend the cottage cheese, protein powder, coconut flour, stevia, and vanilla extract until it’s smooth. Once the mugcake is cool, break it apart to a “dirt” using a fork. Also break apart your quest bar into pieces.
This makes two servings, so you need two glass cups. Put the “dirt” at the base of each cup. Then add the quest bar pieces to the blended cream and mix. Split the blended cream between the two glasses on top of the “dirt.” Top with more quest bar pieces. Enjoy!
