Deep Chocolate Mugcake

You probably want to try this. Just sayin’. This and my pumpkin mugcake are my favorite two ever and have found their way into my mouth countless times.

Serves: 1

  • 1/2 cup raw old fashioned rolled oats
  • 2 TBSP unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 3 stevia packets
  • 1/4 cup pumpkin puree
  • 2 TBSP plain greek yogurt
  • 1/2 cup liquid egg whites (or 3 egg whites)
  • 1/2 tsp almond extract (Optional)

First grind the oats into a flour. Then mix it with the remaining ingredients. Pour into a bowl sprayed with nonstick spray and microwave for 3 minutes. Flip over and top with goodies!!

I topped mine with a coconut cream: Mix 3 TBSP plain greek yogurt, 1 TBSP unsweetened shredded coconut, 1/2 TBSP unsweetened almond milk, 1/2 tsp coconut extract, and 7-8 stevia drops.

I also added a peanut butter drizzle!: Mix 1 TBSP peanut flour (or pb2) with 1.5 TBSP unsweetened almond milk

For EVERYTHING including the toppings: 364 calories; 6g fat, 45 g carbs (9 g fiber), and 23 g protein
