I bring to you… cousin of the Chili Pumpkin Turkey Meatloaf. The curry apple pie turkey meatloaf! Aka, what happens when you run out of pumpkin pie spice. This was a magical save for this week’s meal prep. It came out SOOOO good! Stiff competition; I think it’s my new favorite. I already know I’ve got to make another one for next week. Yummy yummy fun times.
- 1 lb lean ground turkey
- 1/2 cup raw old fashioned rolled oats
- 1/4 cup unsweetened applesauce
- 2 egg whites
- 1 TBSP apple pie spice
- 2 tsp curry powder
- 1 tsp cumin
Mix everything together in a bowl using a utensil. Once evenly mixed, place in a bread loaf pan that’s been sprayed to prevent sticking. Place in the oven at 350F and bake for 35 minutes, or until the meat is cooked completely. Slice and enjoy!
I topped mine with tahini; it’s the perfect addition. Top with whatever you prefer!
