Crispy Chicken Spring Salad

Sometimes my dinners are pretty or something :p. Refreshing salad because the weather is getting warm! Sometimes. Georgia’s crazy. It thinks it wants to be spring but then it decides it misses fall and runs back to it every 4 days. Fickle, georgia. Fickle.

Serves: 1

  • 1 large zucchini
  • 1 cup broccoli
  • 1/4 cup edamame
  • 4 oz cubed butternut squash
  • 1/8 tsp ginger
  • 1/8 tsp coriander
  • 1 serving crispy chicken
  • juice from 1/2 lemon
  • 1 TBSP coconut aminos (soy sauce alternative)

Spiralize your zucchini. Lightly steam it – I use a microwave steamer from amazon for 2 minutes. Also steam your broccoli, edamame, and butternut squash. Again, microwave steamer. Then toss all of this in the ginger and coriander.

Cut and top the salad with a serving of crispy chicken. Then drizzle the lemon juice and coconut aminos.
