Cookies and Cream Protein Cheesecake

Sooo I’ve been wanting to try creating this for a while now, but I haven’t gotten around to it. With the announcement of the new cookies and cream quest bar flavor, it reminded me of this! So I got ta bakin and oh my gosh oh my gosh this is absurd. The texture is like a cheesecake wut. So good. I wanted so badly to eat the batter even before it baked D;

Makes: 4 slices

  • 1/2 package soft tofu (8 oz)
  • 1/2 cup lowfat cottage cheese
  • 2 tbsp white chocolate coconut butter (SweetSpreads brand, or regular)
  • 1/2 tsp vanilla extract
  • 1/3 cup granulated stevia
  • 3/4 scoop cookies and cream whey protein (cellucorbrand)
  • 1 double chocolate chunk quest bar

Blend the tofu, lowfat cottage cheese, coconut butter, vanilla extract, and stevia until smooth. Then stir in the cookies and cream whey protein until even. Microwave the quest bar for 10 seconds to soften. Then press and flatten into the bottom of a ramekin that’s been sprayed with nonstick spray. Pour your cookies and cream blended mixture on top of the quest bar in the ramekin. Bake everything at 350F for 40-45 minutes. Then refrigerate for 4-6 hours. Slice into 4 pieces and serve.

      Use the bags of granulated baking stevia if you can and measure it out. You would need around 15 packets and it doesn’t quite equate that way.
