Coconut Waffle

This was one of my post workout dinners this week. Waffle plate for dinner Kim? Really? Yes; shhh, just let it happen. That’s my motto :p Waffles make me perfectly happy.

Serves: 1

  • 1/3 cup raw old fashioned rolled oats
  • 1/2 scoop coconut cream pie whey protein (from, or vanilla)
  • 2 egg whites
  • 1/4 cup lowfat cottage cheese
  • 1/2 tsp baking powder
  • 1/2 tsp coconut extract
  • 1 stevia packet

Grind the oats into a flour. Then add the remaining ingredients and blend again. Spray a waffle maker with nonstick spray and cook your batter in it!

I topped mine with an egg nog cashew butter cream (2 tsp raw cashew butter, 1 TBSP plain greek yogurt, 1 TBSP unsweetened almond milk, 3 drops brandy extract, 3 drops rum extract, 1/16 tsp nutmeg, and 12-15 stevia drops), a peanut butter marshmallow protein drizzle (1 TBSP pb marshmallow whey protein by cellucor, 1/2 TBSP unsweetened almond milk, and 3-5 stevia drops), mulberries, and unsweetened shredded coconut.
