Serves: 1 (easily multiplied for more)
- 4 oz raw cod
- 1/4 cup unsweetened almond milk
- 2 TBSP unsweetened coconut shreds
- 1/2 tsp curry powder
- 1/4 tsp cumin
First, place the cod in a medium pan. I buy frozen fish and just let it thaw before I eat it. Anyways. Mix the other four ingredients, then pour over the fish in the pan. If you want an extra coconut kick, add some coconut extract. Cook the fish on a medium heat until completely cooked through and no longer pink-ish, around 5 minutes per side. The liquid should have almost completely cooked off by this point. Then enjoy with your favorite side items!
