Cinnamon Sweet Potato Waffle

Day after Thanksgiving leads to constant sweet potato cravings. So for breakfast I had to get a sweet potato fix!!

Serves: 1

  • 1/3 cup raw old fashioned rolled oats
  • 1/2 scoop cinnamon graham cracker whey protein (by Optimum Nutrition, or vanilla)
  • 1 TBSP coconut flour
  • 3 egg whites
  • 1/4 cup baked sweet potato (2 oz)
  • 1/2 tsp cinnamon
  • 3/4 tsp vanilla extract,
  • 1/2 tsp baking powder
  • 1 stevia packet

First grind the oats into a flour. Then add the remaining ingredients and blend again. Cook in a sprayed waffle maker. Orrrr as pancakes in a pan. :)

I topped mine with ith a sweet maple cream (2 TBSP plain Greek yogurt, 1 TBSP sugar free syrup, 1/2 TBSP unsweetened almond milk, 1/4 tsp maple extract, and 7-8 stevia drops) and a healthy chocolate drizzle (2 tsp unsweetened cocoa powder, 1 TBSP unsweetened almond milk, and 1 stevia packet).
