Cinnamon French Toast Roll-Up

I had this weird idea/craving the other day…. I wanted french toast but… I also wanted a crepe…? And I thought maybe, just MAYBE you could use a tortilla for french toast instead of bread. So I wrote down the idea and finally craved it again this morning, so I took a stab at it. I’m not sure if it’s often made, or just extremely weird, BUT IT TASTED DELICIOUS SO WHATEVAAA :DD Anddd it was really quick and easy!

Serves: 1

  • 2 egg whites
  • 2 TBSP unsweetened almond milk
  • 1/4 tsp cinnamon
  • 1 Stevia packet
  • 1 Ezekiel 4:9 tortilla (or favorite tortilla brand)

Combine and whisk the egg whites, almond milk, cinnamon, and stevia. Then place the tortilla in the mixture and let it soak for 3-5 minutes. I just poured the mix on a plate and let it sit there. Then flip the tortilla and let the other side sit for 3-5 minutes. Spray a large pan with nonstick spray and add the soaking tortilla. Cook on a medium heat for 4-5 minutes per side, or until the egg whites are cooked. Then rollllll it up! :D I topped mine with a drizzle of sugar free syrup.
