I’ve never made a skillet cookie but hot dang I can’t imagine it gets any better than THIS. It’s like a snickerdoodle, hopped up on crack, in a tutu, juggling flaming batons, while doing a jig on top of a rainbow. So many magical flavors plus the texture is PERFECT and each bite is a wondershow. I never HAD a skillet until last week so this was the first thing I wanted to make. Now I’m gonna need a constant supply of skillet cookies ready for consumption in my house k cool.

- 1 cup oat flour (ground up raw oats)
- 1/2 cup cinnamon roll Abs Protein Pancakes mix
- 1/4 cup baking stevia
- 1/2 tsp baking soda
- 1/3 cup unsweetened applesauce
- 1/4 cup nut butter (I used caramel french toast cashew butter)
- 1 whole egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar free white chocolate chips
- 1 apple cinnamon Smart Bar (Detour Bar brand)
Preheat the oven to 350 F. In a bowl, add your first four ingredients (the dry ingredients) and mix evenly. Then add the remaining ingredients (the wet ingredients) except for the chocolate chips and smart bar. Mix mix mix until everything is incorporated and even. It should be really thick since this needs to be a cookie dough batter! If you feel that you just can’t mix anymore and the batter is too dry, add 1-2 TBSP water but not more! Once mixed, fold in the chocolate chips and the chopped up smart bar (I cut my pieces small enough to make 20 chunks). Spread your cookie dough evenly into a skillet to fill the entire skillet. Bake at 350 F for 20 minutes. Remove from the oven, let cool for 10 minutes, then cut into 8 pieces and enjoy!!
I enjoy my cookies with a caramel french toast ‘nice cream’ – just 1 frozen banana blended with 1 TBSP of the Caramel French Toast Cashew Butter I baked into the skillet cookie. The hot + cold feel is perrrrrfect. Hot + cold = love.
