Chocolate Mint Donuts
Makes: 4 donuts
Chocolate Donut Batter
- 1/2 cup raw old fashioned rolled oats
- 2 TBSP ground flax seeds
- 3 egg whites
- 1.5 TBSP unsweetened cocoa powder
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 2-3 stevia packets
- 1/2 cup lowfat cottage cheese
- 1/2 tsp vanilla extract
- 8 mint stevia drops
For the donuts, grind your oats into a flour. Then add the remaining donut batter ingredients and blend again. Spray a donut mold pan with nonstick spray and pour the batter into the pan, forming 4 donuts. Bake at 350F for 10 minutes.
Make your vanilla mint icing by blending the cottage cheese, vanilla extract, and mint stevia with a hand blender. Distribute amongst the donuts once cool.
For one donut without icing: 70 calories; 3g fat, 9 g carbs (2 g fiber), 5 g protein.
For one donut with icing: 90 calories; 3 g fat, 10 g carbs (2 g fiber), 8 g protein
