“Chocolate Chip” Protein Waffle

Waffles all day waffles all night. This was my dessert last night! A chocolate chip protein waffle topped with a mint chocolate ice cream. The ice cream is the same recipe as my vanilla low calorie ice cream except I added 2 tsp unsweetened cocoa extract, an extra stevia packet, and 12-15 mint stevia drops. If you’ve never had waffles with ice cream, I seriously recommend it. I used to make waffles topped with soft serve ice cream all the time when I was a freshman living in dorms, and they were notttttt the healthy kind :x This is a healthy, EXTREMELY satisfying alternative to my long-lasting craving :DD

Serves: 1

  • 1/2 cup old fashioned rolled oats
  • 1/2 scoop vanilla whey protein
  • 3 egg whites
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 stevia packet
  • 1/2 a chocolate brownie quest bar

First grind the oats into a flour. Then add the whey protein, egg whites, baking powder, vanilla extract, and stevia. Blend again until evenly mixed. Break up the quest bar into small pieces and swirl it into the batter. Spray a waffle maker with a nonstick spray and cook your waffle! If you don’t have a waffle maker, the batter can also be used to make pancakes.

Nutritional info for the waffle without ice cream on top: 346 calories; 6g fat, 41 g carbs (14 g fiber), 38 g protein

Nutritional info for the ice cream on top: 55 calories; 4 g fat, 5 g carbs (3 g fiber), 2 g protein

    I do not own any protein powder but I was wondering if you knew an alternative or if you knew if they come our okay without any and just subbed for more of the other ingredients. Thanks!

    Hey Kim– quick question. Do you ever grind your oats into a flour and then store them in a container? I was hoping it would stay fresh to use throughout the week. Thanks for all of your awesome recipes!

    HI! Is there another liquid component to this recipe? I used just the egg whites and it seems like theres something missing. I added unsweetened vanilla almond milk to fix it but i was just wondering if you had any other suggestions. thanks!

      That’s all you need in here! It should be able to blend just like that. Did it not blend? If it’s too thick, then I would add almond milk, like you did :)
