Chocolate Chip Cookie Dough Cream Pie

I made this healthy dessert last night then passed out from an abundance of happiness. This single serve chocolate chip cookie dough cream pie was like a little slice of heaven. Or like morgan freeman softly reading bed time stories to me. Mmmm sweet lullabies.

Serves: 1

Crust

Cookie Dough Cream

  • 2 TBSP ground oats
  • 1/2 TBSP coconut flour
  • 2 TBSP plain Greek yogurt
  • 1 TBSP sugar free maple syrup
  • 1/4 tsp imitation butter extract
  • 1 tsp stevia

Vanilla Cream

  • 1/4 cup plain Greek yogurt
  • 1 tsp sugar free vanilla pudding mix
  • 1 tsp stevia

Preheat the oven to 350 F. Microwave 1 double chocolate chunk quest bar for 6 seconds to soften. Cut off 1/4 of the bar and set aside. Spray a 4 inch diameter ramekin with nonstick spray and press the 3/4 quest bar into it to make a thin crust. Bake at 350F for 8 minutes. Let cool.

Mix the remaining 1/4 double chocolate chunk quest bar (broken into pieces) with the cookie dough cream ingredients. Spread inside the crust. Make the vanilla cream by mixing the final 3 ingredients –  plain Greek yogurt, sugar free vanilla pudding mix, and stevia. Spread on top of the cookie dough layer. Let cool in the fridge for 5-10 minutes and serve cold.
