Not the most aesthetic dessert – so much brown, but like. Dis guud. Chocolate buckwheat crepes topped with a s’mores cellucor protein icing, a healthy chocolate drizzle, s’mores quest nutrition protein bar pieces, and a majestic chocolate crumble that I’m in love with. I am as happy as a clam. Whatever that means.
Chocolate Buckwheat Crepes
- 1/3 cup buckwheat flour
- 1/2 cup unsweetened almond milk
- 1 egg white
- 1 TBSP unsweetened cocoa powder
- 2 stevia packets
Mix all of your ingredients! I like to blend mine to get it really incorporated. Pour a thin layer in a large pan sprayed with nonstick spray. Cook on low for 2-3 mins, flip, and cook another min. Makes 2-3 crepes.
S’mores protein icing: mix 1/3 cup plain Greek yogurt, 1/2 scoop smores cellucor protein, and 1 stevia packet.
Chocolate sauce: mix 1 TBSP unsweetened cocoa powder, 1 TBSP + 1 tsp water, and 1-2 stevia packets.
Chocolate crumble: I didn’t measure this but it was coconut flour, unsweetened cocoa powder, water, and stevia! I’m gonna make this again but measure.
