Comfort food at it’s finest.
- 4 egg whites
- 2 TBSP unsweetened almond milk
- 1 TBSP coconut flour
- 1 TBSP chocolate whey protein (or ground flax)
- 1 TBSP unsweetened cocoa powder
- 1/2 TBSP psyllium husks
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 2 stevia packets
- 1 Chocolate Brownie Quest Bar
Blend all of the ingredients except for the quest bar. Spray a large pan with nonstick spray and pour half the batter in. Cook on a medium heat for 2-3 minutes, flip, and cook another 1-2 minutes. Slice 1 chocolate brownie quest bar in half so you have two long strips. Place one in the crepe and roll up. If the quest bar is hard, microwave the whole crepe for 15-20 seconds. Repeat this all for the second crepe.
I topped mine with a blackberry cream (2 tbsp plain Greek yogurt, 1 tbsp sugar free blackberry jelly, 1 tbsp unsweetened almond milk, and 3-5 stevia drops).
